Mexican Papaya Salad

{This citrus-infused papaya combination is a great (and healthy!) brunch addition or simple dessert.}

On a recent trip to Mexico, I was reminded (as I always am!) how inspiring the Mexican culture is. Everything seems to be full of life and color – from textiles, to the people, and, of course, the food! One of the things that always stands out to me when there is the generous use of fruit in all meals. No breakfast is complete without some form of fruit dish.

A favorite of mine that I make over and over is the Mexican papaya salad. Incredibly easy to assemble and the result is always a welcome addition of color and flavor. A kid favorite as well!

- 1 large ripe papaya (or 2-3 small ones)
- 1 whole lemon, juiced,
- 1 tbspn raw turbinado sugar

Peel and clean out seeds from the papaya and cut into 1″ pieces. Place into serving bowl. Squeeze lemon juice over the top and sprinkle the raw sugar over. Toss the salad and allow to sit for 3 minutes before serving.

Letting the salad to sit for a few minutes before serving allows the flavors to macerate together and a beautiful syrup forms in the bowl that can be served on top of the salad.

Buen provecho!
